Meet the Team
My name is Rosalind Newman. I have worked at Paradise Valley Healthcare Center for eight years with a previous background in cooking. My husband and I both enjoy serving at our Church as well as mentoring. Working as the Dietary Director at Paradise Valley Healthcare Center is where I was destined to be and I enjoy making a difference in the quality of nursing care food with an emphasis on cultural foods. I will continue to work diligently to give our residents the constant care and comfort of a home-like environment. We are truly a family here and every resident helps us to grow!
My name is Vivian Elias and I am the Business Office Manager at Paradise Valley Healthcare Center. I am a proud mother of two boys. They are twenty-one and fifteen and my favorite thing in the world to do is watch them play soccer. I have been an Office Manager for twenty-two years, but my favorite years have been the last six that I have worked with Paradise Valley Health Care Center. I really love working for a company that treats their employees with love and values, but also challenges me to be my best self.
Hi, my name is Raquel Catungal and I am sixty years old. I am proud to say that I have worked at Paradise Valley Health Care Center for twenty-five years. I am happily married to my wonderful husband and we have two amazing children! Our family secret of success is “divine power,” with human efforts. I consider working at Paradise Valley a blessing to serve our residents’ needs in our community.
My name is Aaron Burrup. I have been married for over eight years to my beautiful wife Vivian. We have two amazing kids, Kayla and Andrew. We are a very active family and love doing just about anything as long as we are doing it together as a family. I love serving in my church and I would be lost without my faith in Jesus Christ. I love being an Administrator because of my patients. Unfortunately all of my grandparents have passed on; however, when I walk around the hallways at Paradise Valley Healthcare Center I see that I am blessed to have many grandparents that I love and that care for me. I love to get to know my patients, and their families, I always keep an open door policy and give out my cell phone so that I can hear how we can be even better. I love working at Paradise Valley and being a part of the many miracles that happen every day here! There’s no place like Paradise!
Paradise is my home away from home. I have been the Social Service Director since 2008 and AIT since 2015. My degree is in criminal justice with a minor in sociology.I enjoy spending time with my family at home as well as my paradise family. Being a part of this team and caring for our loving residents is the most rewarding job I could have ever imagined.
My name is Cecy Salomon and I am the Assisted Living Wellness Director at Paradise Valley Health Care Center. I was born and raised in Tijuana, Mexico, and I migrated to the USA in 1987. I have three beautiful children, and I am married to the most wonderful husband in the world. I was a housewife for nine years until I went back to school and got certified as a Nurse Assistant. I applied at Paradise in February of 1996. After working as a CNA for ten years I finished nursing school and obtained my license as a Vocational Nurse. I got promoted to Assisted Living Wellness Director, and I’ve been working at this wonderful place for twenty years with the best team ever.
Paradise Valley Health Care Center has given me the opportunity to grow as a professional and as a person as well. Taking care of our residents is my passion; I learn a lot from them, from their families, and their cultures. My job at Paradise is very rewarding. It’s always a great feeling when a resident or a family member says “Thank you for taking good care of my loved one”.
I am very proud, and I feel truly blessed to work at PVHCC.
I have enjoyed working at Paradise for eighteen years. I started out as the Activities Director and loved having fun with the residents every day. Now I work behind the scenes ensuring that all the I’s are dotted and the T’s are crossed in the Medical Records department. I am the mother of two handsome sons, and two wonderful grandchildren. I serve at my church as a Christian Counselor for women who have suffered Domestic violence, I sing on the Praise team, and I am on the Women’s Ministry board. I love working at Paradise because the staff genuinely cares for our residents and they are very happy.
My name is Richard Encinas. I have a loving wife. March 20th will be our 23rd wedding anniversary. We have an amazing smart athletic son who is 11 years old “Richie”. My wife and I moved to San Diego in 1998. I began working here at Paradise in November 1998. I became Director of Maintenance in 2005. I love working here. There is no greater feeling than putting a smile on a resident’s face that lets them know that I care. We have such wonderful employees and residents that make paradise PARADISE!! God bless you all!
